Ingredients list for Poached Fish And Dill Salad

  • 250 grams Fish fillets cut into 1 inch pieces
  • a few sprigs Fresh dill leaves finely chopped
  • 4-5 Black peppercorns
  • 1 Bay leaf
  • 2 inch stalk Celery sliced
  • 1 tablespoon Lemon juice
  • to taste Salt
  • 1/4 teaspoon Black peppercorns crushed
  • 2 tablespoons Olive oil
  • 1 medium Green capsicum cut into 1/2 inch pieces

Method

  1. Heat sufficient water in a shallow pan, add peppercorns, bay leaf and celery. Bring it to a boil. Add the fish pieces and cook uncovered for two minutes or till the fish is done. Do not overcook.
  2. Remove from the water carefully and cool. Prepare dressing using lemon juice, salt, crushed peppercorns and olive oil. Add the dill leaves to this dressing, reserving some for the garnish.
  3. In a bowl arrange poached fish cubes carefully. Add capsicum pieces and sprinkle the dressing. Gently mix and serve chilled garnished with remaining dill leaves.
