Ingredients list for Plum Shortcake

  • 5-6 Plums chopped
  • 225 grams Refined Flour
  • 2 teaspoons Baking powder
  • 5 Eggs
  • 1 teaspoon Vanilla essence
  • 1 cup Sugar
  • 200 grams Butter
  • few to garnish Plum slices
  • to garnish Icing sugar

Method

  1. Preheat oven to 180°C. Sieve together refined flour and baking powder into a bowl.
  2. Whisk together eggs and vanilla essence in another bowl for 1-2 minutes. Add sugar, little by little, and whisk for 5-7 minutes or till fluffy.
  3. Add butter and whisk further for 2-3 minutes. Add plums and flour and mix using cut and fold method.
  4. Pour the mixture into a greased cake tin and bake in the preheated oven for 25-30 minutes. Remove from the cake tin, garnish with fresh plum slices, dust some icing sugar and serve.
