By Sanjeev Kapoor 22 Feb 2016 in Recipes Course New Update Main Ingredients Potatoes, Onions Cuisine American Course Main Course Vegetarian Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Piquant Potatoes In Jackets 4 large Potatoes Onions 1 tablespoon Oil 1 teaspoon Cumin seeds 1 small Onion chopped 1 inch piece Ginger chopped 3-4 cloves Garlic chopped 1/2 teaspoon Turmeric powder 2 teaspoons Coriander powder 1/2 teaspoon Black pepper powder 8 tablespoons Yogurt 1 tablespoon Fresh coriander leaves chopped Method Preheat oven to 190°C. Wash and prick potatoes with a fork. Bake in a preheated oven at 190°C for forty minutes or till done. Cut potatoes in half and scoop out flesh without spoiling the skin. Skin of the potato is popularly known as the jacket. Heat oil in a pan. Add cumin seeds, onion, ginger and garlic. Sauté for a minute. Add scooped potatoes, turmeric powder, coriander powder, black pepper powder and garlic salt. Cook further on medium heat for two minutes, stirring occasionally. Adjust seasoning. Spoon mixture back into potato jackets and top each with a tablespoonful of yogurt. Garnish with coriander leaves and serve hot.
