Ingredients list for Palak ki Kadhi

  • ½ medium bunch Spinach shredded
  • 2 cups Yogurt whisked
  • 4 tablespoons Gram flour (besan)
  • 2 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • ½ teaspoon Fenugreek seeds (methi dana)
  • a pinch Asafoetida
  • 1 large Onion chopped
  • 1 teaspoon Ginger paste
  • 3 Green chillies chopped
  • ¼ teaspoon Turmeric powder
  • ½ teaspoon Red chilli powder
  • to taste Salt
  • 1 teaspoon Sugar

Method

  1. Whisk together the yogurt, gram flour and three cups of water till smooth.
  2. Heat the oil in a non-stick pan, add the cumin seeds and fenugreek seeds. When the seeds begin to change colour, add the asafoetida and onion, and sauté for two minutes.
  3. Add the ginger paste and green chillies, and sauté for half a minute. Add the turmeric powder, chilli powder and spinach, and sauté for two minutes.
  4. Add the yogurt mixture and bring to a boil. Add the salt and sugar, lower the heat and simmer for ten to fifteen minutes, or till the kadhi thickens. Serve hot.
