Pad Thai Yum Yum Noodles

Ingredients list for Pad Thai Yum Yum Noodles

  • 200 grams Flat noodles boiled
  • 2 tablespoons Bean spouts
  • 5-6 Spring onions chopped
  • 5-6 cloves Garlic,chopped
  • 5-6 florets Broccoli
  • 6-8 Button mushrooms sliced
  • 1/2 medium Red capsicum seeded
  • 1/2 medium Yellow capsicum seeded
  • 1 small Green capsicum seeded
  • 2 medium Carrots thin strips
  • to taste Salt
  • 1 teaspoon Soy sauce
  • 2 tablespoons Brown sugar
  • 1 Fresh red chilli diagonally sliced
  • 1 stalk Spring onion greens chopped
  • 3 tablespoons Roasted peanuts coarsely ground
  • 1 tablespoon Lemon juice
  • 1/2 cup Bean sprouts

Method

  1. Heat oil in a pan.
  2. Add onion, garlic, broccoli, mushrooms, three coloured capsicums and carrots and toss.
  3. Add noodles, salt, soy sauce, brown sugar and toss some more.
  4. Add fresh red chilli and toss again.
  5. Add spring onion greens and most of the roasted peanuts and toss.
  6. Transfer into a serving dish
  7. Add lemon juice and bean sprouts.
  8. Top with the remaining roasted peanuts and serve hot.
