Ingredients for Noodle Salad Recipe

  • Noodles boiled 1/2 cup

  • Vegetables cut into small pieces 1 medium

  • Capsicum cut into thick strips 1 medium

  • Peanuts crushed 1 cup

  • Lemon juice 1 tablespoon

  • Red chilli powder 1/2 teaspoon

  • Oil 1 teaspoon

  • Mustard seeds 1 teaspoon

  • Curry leaves 4-5

  • Salt to taste

  • coriander leaves 2 tablespoons

Method

Step 1

Mix together carrot, capsicum, peanuts, lemon juice, red chilli powder in a bowl.

Step 2

Heat oil in a non stick pan. Add mustard seeds.

Step 3

Once they splutter, add curry leaves and add this to the salad.

Step 4

Add boiled noodles and mix well.

Step 5

Refrigerate for one hour. Add salt and mix well.

Step 6

Serve chilled garnished with coriander leaves.
