Add salt, pineapple, onion, green capsicum, gherkins and mint chutney and mix. Add potato, grated cheese and mix well. Spread the filling on one slice and cover with another. Butter both the sides of the inside of a sandwich toaster and place a prepared sandwich carefully. Place the toaster on medium heat and cook till both the sides are golden.
