By Sanjeev Kapoor 17 Dec 2015 in Recipes Course New Update Main Ingredients Green Cardamom, maze Cuisine Indian Course Powders Prep Time 16-20 minutes Cook time 11-15 minutes Serve Taste Mild Level of Cooking Easy Others Veg Ingredients list for Nihari Masala 12-15 Green Cardamom 4 tablespoons maze 4 tablespoons Cumin seeds 25-30 Black peppercorns 2 tablespoons Cloves 4-5 inch piece Cinnamon 5 Green cardamom 3 Black cardamom 1 blade Mace 4-5 tablespoons Poppy seeds (khuskhus/posto) 4-5 tablespoons Roasted chana dal (dalia) 2 Bay leaves 1/2 tablespoon Nutmeg,grated 2 tablespoons Dry ginger powder (soonth) Method Dry roast red chillies fennel seeds, cumin seeds, black peppercorns, cloves, cinnamon, green cardamoms, black cardamoms, mace, poppy seeds, chana dal and bay leaves for two to three minutes or till fragrant. Remove from heat and set aside to cool. Grind to a fine powder in an electric grinder. Add nutmeg and dry ginger powder and grind again for half a minute. Sieve the mixture and store in the refrigerator in an airtight jar.
