By Sanjeev Kapoor 15 Jun 2014 in Recipes Course New Update Main Ingredients Rice , Coconut milk Cuisine Indonesian Course Rice Prep Time 16-20 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Advertisment Ingredients list for Nasi Kuning 1 1/2 cups Rice soaked 1 1/2 inch piece Coconut milk sliced 1 inch stalk Lemon grass braised 2 Bay leaves 1 cup Coconut milk to taste Salt 1/2 teaspoon Turmeric powder 2 cups Vegetable stock 1/2 inch piece Galangal crushed optional 2-3 tablespoons Shallots thinly sliced deep fried Method Grind fresh turmeric with a little water to a smooth paste. Heat a pan, add drained rice, bruised lemon grass, bay leaves, coconut milk and salt and mix. Strain the fresh turmeric puree into the pan. Add two cups of vegetable stock, turmeric powder and let the mixture come to a boil. You can also add galangal if you wish. Cover and cook on medium heat till done. Remove the bay leaves and galangal (if added).
