By Sanjeev Kapoor 22 Aug 2019 in Recipes Course New Update Main Ingredients Rolled oats, Wheat bran Cuisine American Course Breads Prep Time 3.30-4 hour Cook time 51-60 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Advertisment Ingredients list for Multi Grain Bread 3/4 cup Rolled oats 6 tablespoons Wheat bran 1 cup Soya flour 3/4 cup +2 tablespoons Whole wheat flour (atta) 3 cups Refined flour (maida) 17 grams Fresh yeast 2 cups Milk 2 teaspoons Salt 1/4 cup Oil 1/4 cup Brown sugar 2 tablespoons Honey 2 Eggs, lightly beaten Method Advertisment Mix yeast with one-fourth cup of lukewarm water and stir. Set aside for about fifteen minutes. Grease a baking tray. Place the oats in a large bowl. Bring milk to a boil and pour over the oats. Add salt, oil, brown sugar and honey. Cool the mixture. Stir in the yeast mixture, eggs, wheat bran, soy flour and whole wheat flour. Gradually stir in enough refined flour to get a rough dough. Transfer the dough to a floured surface and knead, adding more flour if necessary, until smooth and elastic. Transfer into a clean bowl, cover with a damp cloth and set aside in a warm place until it doubles in volume. This may take about two and a half hours. Knock back the risen dough and knead briefly. Divide the dough into two equal portions. Roll each portion into a thick cylinder and further twist to any shape and place on the baking tray. Cover and set aside to rise for one hour or until doubled in volume. Preheat oven to 190°C/375°F/Gas Mark 5. Bake the breads until the bottoms of breads sound hollow when tapped lightly. This may take around forty five to fifty minutes. Turn them over to a wire rack to cool for slicing and serving.
