Roll out the pastry dough on a lightly floured surface. Line a nine inch pie dish with it gently easing it in so that the dough does not get stretched. Using your thumbs make a fluted edge. Prick the bottom and the sides of the pastry with a fork. Chill in a refrigerator for ten minutes. Blind bake in the preheated oven for ten to fifteen minutes or until lightly browned. Let it cool in the pan itself. For the filling, melt chocolate with butter and golden syrup in a double boiler or alternatively melt for a minute on Microwave HIGH (100%) Stir in eggs, sugar and vanilla essence. Reduce the oven temperature to 175°C/350°F/Gas Mark 4. Pour the chocolate mixture into the baked crust and bake for one hour or until the filling is set. Let it cool completely in the dish. Slightly soften the chocolate bar between your palms. Using a vegetable peeler along the sides of the chocolate bar make short, wide curls. Chill them in a refrigerator till needed. Lightly whip the cream until soft peaks form. Using a rubber spatula spread the cream over the surface of the chocolate filing. Decorate with the chocolate curls and serve immediately.
