Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mirchi Mushroom Recipe

  • Button mushrooms 12-16

  • Green chillies 8 large

  • Bhuna masala 130 grams

  • Spring onion greens 4 stalks

  • Red capsicum 1 medium

  • Oil 2 teaspoons

  • Salt to taste

Method

Step 1

Halve the mushrooms. Make a small slit on all the green chillies. Heat a non-stick pan, add bhuna masala and mushrooms and mix well. Cover and cook for 2 minutes.

Step 2

Add green chillies and spring onion greens to the pan and mix well. Cover and cook till mushrooms are done. Roughly chop red capsicum.

Step 3

Heat oil in another non-stick pan, add red mushrooms and salt and toss. Sauté till they soften. Transfer the mushroom-chilli mixture into a serving bowl, put the red capsicum over them and serve hot.
