Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Middle East Wrap Recipe

  • Rotis 4

  • Tahini 1 1/2 teaspoons

  • Yogurt 1/2 cup

  • Salt to taste

  • Fresh mint leaves hand torn 5-6

  • Onion quartered 1 medium

  • Zucchini sliced 1/2 medium

  • Carrot sliced 1 medium

  • Green capsicum thick strips 1 medium

  • Olive oil 3 tablespoons

  • Lemon juice 2 teaspoons

  • Mixed herbs 1 teaspoon

  • Red chilli flakes 1 teaspoon

  • Fresh parsley chopped a few sprigs

Method

Step 1

Mix tahina, yogurt, salt and fresh mint leaves in a small bowl and set aside. Marinate onion, zucchini, carrot and green capsicum with olive oil, lemon juice, mixed herbs, red chilli flakes and salt for about fifteen minutes.

Step 2

Grill the vegetables on a hot grill till the grill marks are seen on the pieces. Remove and set aside. Divide into four portions. Take one roti, apply the tahina mixture, arrange one portion of vegetables, sprinkle parsley and roll.

Step 3

Serve immediately.
