Ingredients list for Masala Anda Omelette

  • 4 Egg
  • 2 tablespoons Oil
  • 2 medium Onions
  • 1 medium Tomato chopped
  • 1/2 teaspoon Coriander powder
  • 1/2 teaspoon Red chilli powder
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 4 tablespoons Fresh coriander leaves chopped
  • 1-2 Green chillies finely chopped
  • 4 Bread slices toasted

  1. Finely chop onions. Heat 1½ tbsps oil in a non-stick pan. Add onions and sauté for 2 minutes. Add tomatoes and sauté for 2 minutes.
  2. Add coriander powder, ¾ tsp red chilli powder, turmeric powder, salt, half the coriander leaves, green chillies and sauté for 2-3 minutes.
  3. Beat eggs in a bowl and add to the pan. Drizzle remaining oil all around and cook on low heat till well set.
  4. Fold the omelette, cut into four equal pieces.
  5. Garnish with remaining coriander leaves and remaining red chilli powder and serve with toasted bread.
