Ingredients list for Lemon Pepper Pasta

  • 1 Penne pasta
  • 1 teaspoon Red capsicums
  • 2 Pickled jalapenos
  • 2 medium Red capsicum
  • 1 teaspoon Black peppercorns,crushed
  • 200 grams Penne ,boiled
  • 2 tablespoons Extra virgin olive oil
  • 5-6 Sundried tomatoes
  • 2 tablespoons Garlic,chopped
  • to taste Salt

Method

  1. Heat extra virgin olive oil in a non stick pan. Roughly chop red capsicum (pepper) and put into a blender jar. Add sundried tomatoes and a little water and blend into a puree.
  2. Add garlic to the pan and sauté till golden brown. Chop jalapeno peppers. Add the puree to the pan and mix well. Add salt and pasta and mix well.
  3. Add crushed peppercorns and lemon zest and mix well. Squeeze the juice of a lemon and add and mix well. Transfer into a serving dish, garnish with jalapenos and serve hot.
