By Sanjeev Kapoor 07 Mar 2017 in Recipes Course New Update Main Ingredients Lemon juice, Cranberries Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Sweet & Sour Level of Cooking Easy Others Non Veg Ingredients list for Lemon Cranberry Cookies Lemon juice of ½ lemon ¾ cup Cranberries Dried, coarsely chopped Zest of ½ lemon 1½ cups Refined flour (maida) ½ cup Unsalted butter softened 1 cup Granulated sugar ½ teaspoon Vanilla essence 1 Egg ¼ teaspoon Salt ¼ teaspoon Baking powder ¼ teaspoon Baking soda Method Preheat the oven to 180º C. Line a baking tray with parchment paper. Cream together the butter and sugar in a bowl till light and fluffy. Add the vanilla essence, egg, lemon zest and lemon juice and mix well. Add the salt, baking powder, baking soda and flour and mix till well combined. Add the cranberries and mix. Divide the mixture into equal portions and place them on the lined tray. Put the tray in the preheated oven and bake for ten to fifteen minutes. Remove from oven and cool. Serve or store in an airtight container for about five days.
