By Sanjeev Kapoor 07 Mar 2017 in Recipes Course New Update Main Ingredients Potatoes, Pickle masala Cuisine Indian Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Kurkure Achari Aloo 2 medium Potatoes cubed and boiled 1/4 cup Pickle masala 2 tablespoons Rice flour to taste Salt 1 tablespo for deep-frying Oil 1/4 teaspoon Fenugreek seeds (methi dana) 1/2 teaspoon Mustard seeds 1/2 teaspoon Onion seeds (kalonji) 1 tablespoon Garlic chopped 1 inch Ginger chopped 1 medium Onion cut into cubes and layers separated 1/2 teaspoon Garam masala powder 2 tablespoons Fresh coriander leaves chopped Method Put potatoes, rice flourand salt in a bowl, sprinkle some water and mix well. Heat sufficient oil in a kadai and deep fry the potatoes till golden. Drain on absorbent paper. Heat one tablespoon oil in non-stick wok; add fenugreek seeds, mustard seeds and onion seeds and sauté for thirty seconds. Add garlic, gingerand sauté for a minute. Add onion and sauté for a minute. Add pickle masala, fried potatoes, garam masala powderand salt, toss well and cook for thirty seconds. Transfer into a serving dish and serve hot garnished with coriander leaves.
