Ingredients list for Honeycomb

  • 2 tablespoons Honey
  • 1 cup Castor sugar (caster sugar)
  • for greasing Butter
  • 2 tablespoons Corn syrup
  • 1½ teaspoon Baking soda
  • as required Dark chocolate melted

Method

  1. Line an aluminum tray with aluminum foil and grease with some butter.
  2. Heat castor sugar in a non-stick pan. Add some water, honey and corn syrup, mix and cook till sugar caramelizes.
  3. Add baking soda and mix well. Transfer the mixture into the baking tin, spread evenly and set aside to cool. Refrigerate till set.
  4. Demould and break into pieces.
  5. Dip half of the pieces into melted dark chocolate and place on a plate. Place the remaining on the plate.
  6. Fill a piping bag with some melted chocolate and pipe over the honeycomb pieces.
  7. Serve.
