Ingredients list for Ground Chicken Casserole

  • 500 grams Chicken Mince
  • 2 cloves Green Tomatoes
  • 6 Black peppercorns
  • 1 Clove
  • 1/8 teaspoon Dried thyme
  • to taste Salt
  • 1/2 small Onion
  • 3 Green chillies
  • 6 medium Green tomatoes
  • 1/2 cup Fresh coriander leaves
  • 2 medium Green capsicum
  • 2 tablespoons Oil
  • 6 Corn tortillas
  • 1/2 cup Sour cream
  • 3/4 cup Cheddar cheese

  1. Wash and drain chicken mince thoroughly. Peel and wash garlic. Grind one garlic clove, peppercorns, clove, thyme and salt in a mortar. Add this paste to chicken mince and mix well.
  2. Peel, wash and chop onion. Remove stems and wash green chillies. Wash green tomatoes. Clean, wash and roughly chop coriander leaves. Wash capsicums and wipe dry.
  3. Heat one tablespoon of oil in a pan, add onion and sauté till it turns translucent. Add chicken mince and continue to sauté over medium heat for ten minutes. Keep aside. Boil green chillies in half a cup of water for two to three minutes. Add green tomatoes and cook till they change colour. Drain and let cool. Transfer to a blender, add one clove of garlic, coriander leaves, salt and grind to a puree. Keep aside. Roast capsicums till outer skin is slightly charred. Remove skin and cut into strips. Preheat oven to 190° C.
  4. Heat remaining oil in a skillet and fry each tortilla on both sides for a minute each. Arrange three tortillas overlapping each other in a baking dish. Cover with a layer of mince, a layer of half the capsicum strips, a layer of half the sour cream and one third of the grated cheese. Repeat these layers. Cover with green tomato puree and bake in a preheated oven at 190° C for five minutes. Sprinkle remaining grated cheese and bake till cheese melts and turns slightly brown.
  5. Serve hot.
