Green zucchini sliced vertically
Yellow Zucchini sliced vertically
Paneer (cottage cheese) grated
Parmesan cheese grated
Crushed black peppercorns
Lemon rind grated
Fresh mint leaves chopped
Add salt to zucchini slices and set aside for 5-7 minutes. Place slices on a griller and drizzle little oil on top. Cover and grill on both sides for 2-3 minutes. Remove from heat and cool down to room temperature.
Mix cottage cheese, walnuts, cheese, crushed peppercorns, salt, lemon rind, lemon juice and mint leaves well in a bowl. Place grilled zucchini slices on worktop.
Place some cottage cheese mixture on one side of each and roll tightly.
