Grilled Chicken and Peppers Sandwich

Ingredients list for Grilled Chicken and Peppers Sandwich

  • ½ cup Boneless chicken cubed
  • ½ cup Capsicum mixed, diced
  • 8 Bread slices Rye
  • to taste Salt
  • to taste Crushed black peppercorns
  • 1½ teaspoons Red chilli flakes
  • 2 teaspoon Mixed herbs dried
  • 1 tablespoon Garlic chopped
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons Oil
  • 2-3 tablespoons Mayonnaise
  • 1-2 Fresh thyme sprigs
  • 150 grams Mozzarella cheese
  • for greasing Butter

Method

  1. Preheat an electric griller.
  2. Take mixed capsicums in a bowl. Add salt, crushed peppercorns, ½ teaspoon chilli flakes, 1 teaspoon mixed dried herbs, ½ tablespoon garlic and 1 teaspoon Worcestershire sauce and mix. Add 1 teaspoon oil and mix well.
  3. Take chicken in another bowl. Add salt, crushed peppercorns, ½ teaspoon chilli flakes, remaining mixed dried herbs, remaining garlic and remaining Worcestershire sauce and mix. Add remaining oil and mix well.
  4. Place marinated bell peppers on the preheated griller and grill till golden on both sides. Transfer into a bowl. Similarly grill the marinated chicken and transfer into another bowl.
  5. Take mayonnaise in a bowl. Add torn thyme sprigs and remaining chilli flakes and mix well.
  6. Spread some mayonnaise mixture on each bread slice. Place grilled chicken pieces and grilled capsicums on top of 4 bread slices. Grate some mozzarella cheese on top and cover with remaining bread slices.
  7. Grease the preheated griller with some butter, place the prepared sandwiches and grill from both sides till golden..
  8. Cut diagonally and serve immediately.
