Ingredients list for Green Chicken Tikka

  • 250 grams Boneless chicken legs, cut into 1½ inch pieces
  • ¼ cup Fresh fenugreek leaves (methi)
  • ¼ cup Fresh spinach leaves (palak) shredded
  • ¼ cup Fresh mint leaves
  • to taste Salt
  • 1 tablespoon Lemon juice
  • 1 teaspoon Red chilli powder
  • 2 tablespoons Butter
  • 5-6 Garlic cloves
  • 1 inch Ginger
  • 1-2 Green chillies roughly chopped
  • 1 teaspoon Coriander powder
  • ½ teaspoon Cumin powder
  • 1 teaspoon Garam masala powder
  • 2-3 tablespoons Yogurt
  • for basting Oil for greasing and
  • 4-6 Cherry tomatoes halved
  • as required Cucumber triangles
  • as required Small onions roundels
  • for garnishing Green chutney

Method

  1. Take chicken in a bowl. Add salt, lemon juice, chilli powder and butter and mix well. Set aside for 10-15 minutes.
  2. Preheat an electric griller.
  3. Grind together garlic cloves, ginger and green chillies to a paste. Add fenugreek leaves, spinach leaves, coriander leaves, mint leaves and a little water and grind again to a smooth paste.
  4. Add the ground paste, coriander powder, cumin powder, garam masala powder and yogurt to marinated chicken and mix well.
  5. Grease the preheated griller with some oil, place the marinated chicken pieces and grill, basting with some oil a couple of times, till evenly cooked and golden on both sides, basting with some oil.
  6. Skewer 1 halved cherry tomato, 1 cucumber triangle, 1 onion roundel and 1 grilled chicken piece on each toothpick and place on a serving platter.
  7. Drizzle some green chutney on top and serve hot.
