French cuisine consists of cooking traditions and practices from France. Cheese and wine are a major part of the cuisine, playing different roles regionally and nationally, with many variations.
French cuisine was codified in the 20th century as the modern haute cuisine. Knowledge of French cooking has contributed significantly to Western cuisines and its criteria are used widely in Western cookery school boards and culinary education. 
French regional cuisine is characterized by its extreme diversity and style. Traditionally, each region of France has its own distinctive cuisine.

Ingredients for Gougères Recipe

  • Refined flour (maida) ½ cup

  • Mozzarella cheese grated ¾ cup

  • Butter 5 tablespoons

  • Salt ½ teaspoon

  • Crushed black peppercorns ? teaspoon

  • Eggs 2

  • Fresh parsley chopped ¼ teaspoon

  • Parmesan cheese grated ½ cup

Method

Step 1

Preheat oven to 220°C. Line a baking tray with a silicon sheet.

Step 2

Heat three-fourth cup of water in a non-stick pan. Add butter, salt and crushed peppercorns, mix and bring to a boil.

Step 3

Add flour and stir until it forms dough. Cook for two minutes to dry out.

Step 4

Transfer the dough into a bowl and cool slightly. Add eggs, one at a time, and mix until well combined.

Step 5

Add mozzarella cheese and parsley, mix well. Divide the dough into twelve equal portions and shape them into balls.

Step 6

Place the prepared balls on the lined tray. Sprinkle parmesan cheese on top. Put the tray in the preheated oven and bake for ten minutes. Reduce the temperature to 190° C and bake for twenty to twenty-five minutes.

Step 7

Serve warm.
