Goan Potato Cashew Curry You might think there is nothing novel about a potato curry, but this one will make you think again. With a base of mashed potatoes and cashewnuts which add a lovely creamy bite to each mouthful – this mild potato and cashew curry along with steamed rice will comfort you even on the most stressful days. By Sanjeev Kapoor 06 Mar 2019 in Recipes Course New Update Main Ingredients Potatoes, Cashewnuts Cuisine Goan Course Main Course Vegetarian Prep Time 16-20 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Goan Potato Cashew Curry 4 medium Potatoes boiled, peeled and mashed 15 Cashewnuts soaked 2-3 tablespoons Ghee 1 teaspoon Cumin seeds ¼ teaspoon Asafoetida 6-8 Curry leaves 2 medium Onions finely chopped 2-3 Green chillies finely chopped ¼ teaspoon Turmeric powder to taste Salt a pinch Sugar 2 tablespoons Fresh coriander leaves chopped Method Heat ghee in a non-stick pan. Add cumin seeds and let them change colour. Add asafoetida and curry leaves and sauté for a few seconds. Add onions and green chillies and sauté on medium heat till the onions turn golden brown. Add turmeric powder and sauté for a few seconds. Add potatoes, 1cup water and cashewnuts and mix well. Add salt and sugar and mix well.Cover and cook on low heat for 4-5 minutes.
