Goan Mutton Curry

Mutton marinated in yogurt and cooked with masalas and served garnished with fried onion. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Goan Mutton Curry

  • 750 grams Mutton 1 1/2 inch pieces on the bone
  • 1/4 cup Yogurt
  • 1 teaspoon Turmeric powder
  • 2 large Onions
  • 3 tablespoons Oil
  • 1 1/2 inch pieces Ginger crushed
  • 6 cloves Garlic crushed
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cinnamon powder
  • 1/2 teaspoon Clove powder
  • 1/2 teaspoon Black pepper powder
  • 1 teaspoon Red chilli powder
  • 2 tablespoons Desiccated coconut
  • to taste Salt
  • 2 teaspoons Vinegar

Method

  1. Whisk yogurt and turmeric powder together. Add the mutton cubes and marinate for two hours in the refrigerator. Chop one onion and slice the other. Heat one and half tablespoons oil over medium heat in a heavy bottomed pan and sauté sliced onion until brown.
  2. Drain and keep aside.Add the remaining oil to the pan and sauté chopped onions until soft. Add crushed ginger and garlic and sauté for one minute
  3. Add coriander powder, cinnamon powder, clove powder, black pepper powder and red chilli powder. Sauté for one minute over low heat.
  4. Add two tablespoons of water and sauté till dry.Add desiccated coconut sauté for two minutes over low heat.
  5. Add meat and increase the heat. Stir and fry the meat for five minutes or until it changes colour. Add two cups of warm water and bring it to a boil.
  6. Cover and simmer for thirty minutes.Add fried onions and salt. Further simmer for thirty minutes or until the meat is tender.Stir in vinegar, remove from heat, serve hot.
