This recipe is from FoodFood TV channel By Sanjeev Kapoor 10 Dec 2015 in Recipes Course New Update Main Ingredients Tomato, Gram flour (besan) Cuisine Marwari Course Rice Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Advertisment Ingredients list for Gatte Aur Tomato Ka Pulao 1 medium Tomato 1 cup Gram flour (besan) 2 tablespoons Yogurt to taste Salt a pinch Baking soda 1/2 teaspoon Ginger chopped 1/4 teaspoon Red chilli powder 1/4 teaspoon Garam masala powder a pinch Asafoetida 1 tablespoon Ghee a few Fresh mint leaves Pulao Gatte 1 1/2 cups Basmati rice soaked 3 teaspoons Ghee 2 stick Cinnamon 3-4 Green cardamoms 1 Black cardamom 3-4 Cloves 1 teaspoon Cumin seeds 1 Bay leaf 1 inch piece Ginger 3-4 cloves Garlic 2 tablespoons Coriander powder 2 tablespoons Red chilli powder 1/4 teaspoon Turmeric powder Method Advertisment To make gatte, place gram flour in a bowl, add yogurt, salt, baking soda, ginger, red chilli powder, garam masala powder and asafoetida. Add 1 tbsp ghee and mix. Chop few mint leaves and add and mix well. Add sufficient water and knead into a stiff dough. Divide into equal portions and roll each portion into cylinders. Boil sufficient water in a deep non stick pan, put the cylinders into the pan and cook till they rise to the top. Drain well. Cool and cut into small pieces. Heat 3 tsps ghee in another deep non stick pan. Add cinnamon, green cardamoms, black cardamom, cloves, cumin seeds and bay leaf and saute till fragrant.Meanwhile put ginger, garlic and tomato into a jar and crush with a hand blender. Add the gatte to the pan and saute for 2 minutes. Add ginger-garlic-tomato mixture and mix. Add coriander powder, red chilli powder, salt, turmeric powder and saute for a minute. Drain rice and add to the pan and mix well. Rinse the jar with ½ cup water and put into the pan. Add 2½ cups water and mix. When the water comes to a boil, cover the pan, reduce heat and cook till the rice is done. Serve hot.
