Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Gadhio Khichdo Recipe

  • Wheat broken 500 grams

  • Ghee 5 tablespoons

  • Milk 3 cup

  • Sugar 100 grams

  • Nutmeg powder 1/2 teaspoon

  • Green cardamom powder 1 teaspoon

  • Coconut, scraped to garnish

  • Raisins to garnish

Method

Step 1

Mix four tablespoons of ghee in broken wheat and cook in double the quantity of water till almost dry.

Step 2

Heat one tablespoon of ghee in a kadai. Add broken wheat, milk and sugar. Bring the milk to boil and reduce the heat to simmer.

Step 3

Keep on stirring till thick and dry. Add cardamom and the nutmeg powder and mix.

Step 4

Pour this into a greased tray to set. Garnish with scraped coconut and raisins. Cut into desired shapes and serve.
