Ingredients list for Fruity Cupcakes

  • 2 Bananas
  • 3 Eggs
  • ¾ cup Castor sugar (caster sugar)
  • 1 cup Walnuts roughly chopped
  • ¾ cup Butter
  • 2 cups Refined flour (maida)
  • 1 teaspoon Soda bicarbonate
  • 1 teaspoon Cinnamon powder
  • For crumble
  • ½ cup Butter
  • 1 teaspoon Cinnamon powder
  • ½ cup Walnuts roughly chopped
  • 4 tablespoons Castor sugar (caster sugar)
  • 4 tablespoons Refined flour (maida)

Method

  1. Preheat oven to 180º C.
  2. Break eggs in a bowl, add sugar and beat with electric beater till the mixture is creamy.
  3. Sieve together refined flour, soda bicarbonate and cinnamon powder into the bowl.

  5. To make crumble, put butter in another bowl, add cinnamon powder, walnuts, sugar and refined flour and mix well.
  6. Put the banana-egg mixture into silicon cupcake moulds,place them on a baking tray, top with the crumble. Placethe tray in the preheated oven and bake for 30-35 minutes.
  7. Remove cupcakes from the moulds, arrange on a serving plate and serve hot.
