Fruit Tartlets

Cocoa flavoured tart shells filled with mixed fruit jam and mixed fruits. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Fruit Tartlets

  • Refined Flour
  • 125 grams Butter
  • 3 tablespoons Brown sugar
  • 250 grams Refined flour (maida)
  • 3 tablespoons Cocoa powder
  • a pinch Salt
  • FOR FILLING
  • 4 tablespoons Mixed fruit jam
  • 1 tablespoon Lemon juice
  • 1 cup Double cream whipped
  • 2 Kiwi fruit cut into small cubes
  • 15-20 Grapes halved
  • 1 large Apple cut into small cubes
  • 2 medium Bananas cut into small cubes
  • for garnish Fresh mint leaves

Method

  1. For the pastry combine butter, brown sugar and cocoa over low heat.
  2. When the butter has melted, remove from heat and pour over the flour.
  3. Add very little chilled water and bind well to make stiff dough.
  4. Gather into a ball, cover with cling wrap and chill the dough in the refrigerator for atleast thirty minutes.
  5. Preheat the oven to 180°C. Grease eight to ten tartlet tins.
  6. Roll out the dough between two sheets and stamp out four inch diameter rounds with a fluted cutter.
  7. Line the tartlet tins with dough. Prick the bottoms and chill for fifteen minutes.
  8. Bake blind for ten minutes, and then bake again for another ten minutes.
  9. Leave to cool, then remove from tins. Melt jam with lemon juice.
  10. Brush a thin layer at the bottom of the tartlet.
  11. Spread a thin layer of the whipped cream in the tartlet shell.
  12. Arrange the cut fruits, brush evenly with the jam glaze and serve
