Ingredients list for Fish In Tomato Pepper Sauce

  • 1(675) grams Fish
  • 2 tablespoons Lemon juice
  • 1/2 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • to taste Salt
  • 10 Black peppercorns crushed
  • 2-3 cloves Garlic chopped
  • FOR SAUCE
  • 6 cloves Garlic chopped
  • 1 medium Onion chopped
  • 2 cups Tomato concasse
  • 1/2 cup White wine
  • 3 tablespoons Tomato ketchup

Method

  1. Fillet the fish and cut into four steaks. Combine lemon juice, half of the oregano, basil, salt, peppercorns and garlic and apply on the fish steaks.
  2. Set aside to marinate for twenty to thirty minutes. In a non-stick frying pan roast garlic and onion till brown. Add tomato concasse, remaining oregano, white wine and tomato ketchup and cook for a couple of minutes
  3. Add marinated fish steaks. Cover and allow the fish to cook. Serve hot.
