Ingredients for Fig and Bran cake Recipe

  • Figs Chopped ½ cup

  • Bran ½ cup

  • Whole wheat flour (atta) 1½ cup

  • Baking powder 1 teaspoon

  • Baking soda ½ teaspoon

  • Nutmeg powder ? teaspoon

  • Cinnamon powder ¼ teaspoon

  • Eggs 2

  • brown sugar/jaggery ¾ cup

  • Rice bran oil ¼ cup + to

  • Orange juice ½ cup

Method

Step 1

Preheat oven to 180° C.

Step 2

Sieve wheat flour, bran, baking powder, baking soda, nutmeg powder and cinnamon powder into a bowl.

Step 3

Break eggs into another bowl and beat with a hand blender. Add brown sugar and beat till frothy.

Step 4

Lightly grease a non-stick cake tin, dust with dry flour and shake off excess.

Step 5

Add rice bran oil, orange juice, figs and beaten eggs to the flour mixture and fold in well.

Step 6

Pour the batter into the cake tin and pat the tin on the table so that batter settles well.

Step 7

Place the tin in the preheated oven and bake for about 25 minutes. Check after 20 minutes by inserting a skewer into the cake. If it comes out clean the cake is done. If the skewer does not come out clean, bake for some more time.

Step 8

Take the tin out of the oven and let it cool. Remove the cake from the tin, slice and serve with cups of hot tea.
