This recipe is from FoodFood TV channel By Sanjeev Kapoor 02 Dec 2014 in Recipes Course New Update Main Ingredients Spaghetti , Eggplant Cuisine Spanish Course Noodles and Pastas Prep Time 0-5 minutes Cook time 21-25 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Veg Advertisment Ingredients list for Fideuà 150 grams Spaghetti 1 medium Eggplant 2 tablespoons Extra-virgin olive oil 1 medium Tomato 1 1/2 medium Onions sliced 1 medium Carrot 1 medium Green zucchini 4-5 Garlic cloves to taste Salt 1 teaspoon Cumin powder 1 teaspoon Red chilli powder 2 cups Vegetable stock Few strands of saffron to taste Crushed black peppercorns Lemon juice for drizzling for garnishing Lemon slices Method Advertisment Heat extra-virgin olive oil in a non-stick paella pan. Roughly chop tomato. Add onions to the pan and sauté till translucent. Slice carrot and cut zucchini in big cubes. Roughly chop garlic and add to the pan and sauté further till lightly browned. Add carrot and mix well. Cut eggplant in big cubes. Add tomato, zucchini cubes and eggplant cubes to the pan and mix well. Add salt and mix well. Roughly break spaghetti and add to the pan. Add cumin powder, red chilli powder and vegetable stock and mix well. Add saffron and mix well. Add crushed peppercorns and mix well. Cover and cook on medium heat till the vegetables and spaghetti are done. Remove the pan from heat, drizzle lemon juice, garnish with lemon slices and serve immediately.
