Ingredients list for Feta Stuffed Chillies

  • 12 large Red Chillies slit and deseeded
  • 4 Feta Cheese drained and finely chopped
  • 150 grams Feta cheese

Method

  1. Heat the Grill Pan. Place the chillies in it and grill for six to eight minutes, turning occasionally. Transfer into a plastic bag for a few minutes and peel away the skins.
  2. To make the filling, combine sun-dried tomatoes, feta cheese, spring onions, mint, basil, salt and pepper in a bowl. Mix well. Stuff the chillies with the filling and arrange on a serving dish.
  3. Drizzle olive oil and vinegar over them. Chill in refrigerator for half an hour and serve immediately.
