Ingredients list for Eight Jewel Vegetables

  • 5-6 medium Mixed Vegetables halved
  • 1 small Dark Soy Sauce 1/2 inch cubes
  • 1/4 small Zucchini 1/2 inch pieces
  • 10-12 Cashewnuts
  • 1 small Green capsicum 1/2 inch pieces
  • 1 small Red capsicum 1/2 inch pieces
  • 1 small Yellow capsicum 1/2 inch pieces
  • 3 Spring onions, sliced
  • 3-4 cloves Garlic chopped
  • 1 inch piece Ginger chopped
  • to taste Salt
  • 1 tablespoon Dark soy sauce
  • 1 teaspoon Oyster sauce
  • a pinch MSG optional
  • 1 teaspoon Brown sugar
  • 2 teaspoons Cornflour/ corn starch
  • 2 Fresh red chillies sliced

Method

  1. Heat a wok, add spring onions, garlic, ginger and cook, stirring continuously. Add mushrooms, carrots and mix. Add quarter cup of water and cook.
  2. Add broccoli, zucchini, salt, soy sauce, oyster sauce and mix. Add cashewnuts and mix. Add one cup of water, MSG, brown sugar and mix.
  3. When the water comes to a boil, add cornflour blended in quarter cup of water and mix. Add fresh red chillies. When it begins to thickens, add capsicums and mix. Cook for a minute more and serve hot.
