Egg Pulusu Hard boiled eggs cooked the Andhra way - in a spicy tamarind gravy This recipe is from FoodFood TV channel By Sanjeev Kapoor 22 Nov 2015 in Recipes Course New Update Main Ingredients Eggs, Curry Leaves Cuisine Andhra Course Main Course Egg Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Non Veg Ingredients list for Egg Pulusu 6 Eggs boiled and peeled 5 tablespoons Curry Leaves 1/2 teaspoon Turmeric powder a pinch Fenugreek seeds (methi dana) 1/4 teaspoon Mustard seeds 1 to taste Dried red chillies broken 10-12 Curry leaves 2 medium Onions chopped 1 tablespoon Ginger-garlic paste 1 tablespoon Coriander powder 1 teaspoon Cumin powder 2 teaspoons Red chilli powder 1 tablespoon Tamarind pulp to taste Salt Method Heat 4 tbsps oil in a deep non stick pan. Add ¼ tsp turmeric powder and eggs and sauté, rotating the pan, for 1-2 minutes. Once the eggs are well coloured, drain and place them in a bowl. Add 1 tbsp oil to the same pan. Add methi dana, mustard seeds, red chilli, curry leaves and onions and sauté till lightly browned. Dilute ginger-garlic paste with 1 tbsp water and add to the pan and mix well. Add the remaining turmeric powder, coriander powder, cumin powder and red chilli powder and sauté for 1 minute. Add ½ cup water and mix. Add tamarind pulp and salt and mix well. Add eggs and cook for 1-2 minutes or till the eggs are heated through. Serve hot.
