By Sanjeev Kapoor 21 Mar 2016 in Recipes Course New Update Main Ingredients Eggs , Tomatoes Cuisine Maharashtrian Course Snacks and Starters Prep Time 6-10 minutes Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Non Veg Ingredients list for Egg Bhujne 4 Eggs 2 tablespoons Tomatoes 1 tablespoon Crushed garlic 1 teaspoon Green chillies finely chopped 2 medium Onions finely chopped 1 medium Tomato finely chopped 1 medium Green capsicum finely chopped 1 teaspoon Red chilli powder 1/2 teaspoon Turmeric powder 2 tablespoons Fresh coriander leaves chopped to taste Salt Method Heat oil in a non-stick pan, add garlic and green chillies and sauté till garlic turns pink. Add onions and sauté till they turn translucent. Add tomato and capsicum, mix and cook till the tomato turns pulpy. Add red chilli powder, turmeric powder, one tablespoon coriander leaves and salt. Mix well and cook on low heat for a minute. Add little water, mix and cook for a minute. Break the eggs, one by one, into the pan, cover and cook on low heat for two minutes. Serve hot garnished with remaining coriander leaves.
