Ingredients

  • Paneer (cottage cheese),cut into 1 inch cubes
    500 grams
  • Coriander seeds
    1 tablespoons
  • Cumin seeds
    1 teaspoon
  • Ginger
    1 inch
  • Garlic
    3-4 cloves
  • Fresh coriander leaves,roughly chopped
    1 cup
  • Green chillies

  • Salt
    to taste
  • Lemon

  • Hung yogurt
    2 tablespoons
  • Extra virgin olive oil
    5 tablespoons
  • Cherry tomatoes
    a few
  • Onion rings
    few
  • Lemon slices
    few
  • Red capsicum,thin strips
    few

Method

Step 1


Grind together coriander seeds, cumin seeds, ginger, garlic, fresh coriander leaves, green chillies with a little water to a fine paste.

Step 2


Transfer into a bowl, add salt, juice of 1 lemon and mix well. Add hung yogurt and mix well. Add 2 tbsps extra virgin olive oil and mix well.

Step 3


Add cottage cheese cubes and mix well and set aside to marinate for 15 minutes. Heat the remaining extra virgin olive oil in a non stick pan. String cottage cheese cubes and cherry tomatoes alternatively on skewers and place them in the pan.

Step 4


Cook, rotating the skewers from time to time, till the cottage cheese gets cooked evenly all around. Serve hot garnished with onion rings, lemon slice and thin strips of red capsicum.
