Peel and wash the vegetable and slice thinly into semi-circular shapes. Heat sufficient oil in a kadai and deep fry the slices till brown. Drain onto an absorbent paper. In another kadai, heat one tablespoon of oil. Add cloves, black cardamoms, cumin seeds, red chilli powder and one-cup water. Add fried nolkohl, fennel powder, dry ginger powder and salt. Add the leaves. Bring to a boil and cook covered till done. Serve hot.
