By Sanjeev Kapoor 02 Dec 2015 in Recipes Course New Update Main Ingredients Cucumber, Rice flour Cuisine Tamil Nadu Course Snacks and Starters Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Cucumber dosa 1 cup Cucumber pureed 1 cup Rice flour a pinch Asafoetida 6 Green chillies finely chopped 1 inch piece Ginger grated 1 tablespoon Lemon juice 1 teaspoon Sugar to taste Salt as required Oil Method Mix in cucumber puree and rice flour. Add one and a half cups of water to make a batter of pouring consistency. Let it ferment for four hours. Mix in asafoetida, green chillies, ginger, lemon juice, sugar and salt to taste. Heat an iron tawa till it becomes very hot. Sprinkle some water. When the water starts evaporating, wipe with a soft cloth. Lower heat. Sprinkle a few drops of oil and spread it with a piece of onion or potato. Pour a ladle full of batter and spread it as thinly as possible. A couple of dosas may go wrong but once the tawa gets seasoned the rest of the dosas will come out well. Pour oil around the dosa and let it cook till it becomes crisp at the edges and turns golden brown. Fold and remove.
