By Sanjeev Kapoor 25 Apr 2018 in Recipes Course New Update Advertisment Main Ingredients Cucumber, Garlic Cuisine Spanish Course Soups Prep Time 0-5 minutes Cook time 0-5 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Cucumber Gazpacho 2 medium Cucumber peeled 3-4 Garlic cloves 1 medium Cucumber 1 medium Green capsicum + for sprinkling Olive oil 1 tablespoon 1 cup Green grapes 1 teaspoon Lemon juice to taste Salt to taste Crushed black peppercorns 10-12 Fresh mint leaves Method Reserve ¼ part of the cucumber for garnishing and peel rest of the cucumber. Slice cucumbers, roughly chop capsicum. Place them in the blender jar, add garlic, grapes, lemon juice, salt, pepper powder and mint leaves and blend till smooth. Add olive oil and blend till smooth.
