Crumbed Chicken Fingers

Boneless pieces of chicken marinated in a mixture of egg and buttermilk, rolled in breadcrumbs and fried crisp. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Crumbed Chicken Fingers

  • 6 Boneless chicken breast
  • 1 Big Egg beaten
  • 1 cup Buttermilk
  • 1 1/2 teaspoons Garlic chopped
  • to taste Salt
  • 1 cup All purpose flour
  • 1 cup Seasoned breadcrumbs
  • 1 teaspoon Baking powder
  • to deep fry Oil

Method

  1. Cut chicken breasts in long strips. In a small bowl combine the egg, buttermilk, finely chopped garlic and salt.
  2. Mix together, marinate the chicken in this mixture for atleast two hours.
  3. In another bowl mix together the flour, seasoned bread crumbs and baking powder.
  4. Remove chicken from the marinade and drain. Discard the buttermilk mixture.
  5. Place chicken in flour mixture bowl. Shake well to coat evenly. In a large skillet, heat oil.
  6. Add chicken and fry in hot oil until golden brown and juices run clear. Drain on paper towels and serve with tomato ketchup or chutney.
