Ingredients list for Cream of Spinach Soup

  • 1 cup Spinach leaves (palak) blanched and pureed
  • 1 teaspoon Butter
  • 2 tablespoons Refined flour (maida)
  • 2 cups Milk
  • to taste Salt
  • to taste Black pepper powder
  • 2-3 tablespoons Oil
  • 6-7 Spinach leaves (palak)

Method

  1. Heat butter in a non-stick pan. Add refined flour, mix and sauté for a minute.
  2. Add milk and cook till thick, whisking continuously.
  3. Add pureed spinach, salt, pepper powder, stir well and simmer for 2-3 minutes.
  4. Heat oil in an on-stick pan.
  5. Shred spinach leaves finely and add to the oil. Fry till crisp and drain on absorbent paper.
  6. Pour soup into a serving bowl, garnish with crispy spinach and serve piping hot.
