Crab Chilli Toast

A delightful starter – round bread toasts topped with spicy crabmeat mixture and cheese and baked. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Crab Chilli Toast

  • 1 cup Crabmeat
  • 1 Fresh red chilli
  • 6-8 White bread slices
  • Oil for drizzling
  • 1 medium Onion finely chopped
  • ½ cup Spring onion greens finely chopped
  • 1 tablespoon Red chilli sauce
  • 1 tablespoon Mayonnaise
  • 1 tablespoon Lemon juice
  • to taste Salt
  • For topping Mozzarella cheese Grated
  • for garnishing coriander sprig fresh

Method

  1. Preheat oven to 180ºC.
  2. Place a medium sized cookie cutter over the bread slices and cut roundels. Place these roundels on a baking tray and drizzle some oil on top. Place the tray in the preheated oven and bake for 2-3 minutes. Remove from heat, transfer onto the worktop and cool.
  3. Put crab meat, onion, spring onion greens, red chilli sauce, mayonnaise and lemon juice in a bowl.
  4. Finely chop bird’s eye chilli, add to the bowl and mix well. Add salt and mix again.
  5. Put a portion of the crabmeat mixture over the baked bread roundels, top with some cheese and place them on a baking tray. Place the baking tray in preheated oven and bake till cheese melts.
  6. Serve hot garnished with coriander sprigs.
