By Sanjeev Kapoor 13 Aug 2014 in Recipes Course New Update Main Ingredients Green capsicum cut into two and deseeded, Tomato Cuisine Fusion Course Main Course Vegetarian Prep Time 6-10 minutes Cook time 11-15 minutes Serve 4 Taste Select Taste Level of Cooking Moderate Others Veg Advertisment Ingredients list for Colourful Vegetable Basket 2 large Green capsicum cut into two and deseeded 1 small Tomato chopped 500 grams Paneer (cottage cheese) cut into small pieces 1/2 cup Green peas 50 grams French beans chopped 1 medium Carrot chopped 1 Potato boiled and cut into small cubes 2 tablespoon Oil 2 small st Cinnamon 2 Green chillies 1/2 tablespoon Cumin powder 1/2 tablespoon Coriander powder 1 teaspoon Garam masala a pinch Turmeric powder to taste Salt for garnish coriander leaves Method Heat oil in a non stick pan; add cinnamon sticks and green chillies, sauté a little. Add tomato, green peas, French beans, carrot and potatoes. Saute for a while. Add cottage cheese and mix well. Add ½ cup water and allow the mixture to boil. Add cumin powder, coriander powder, garam masala, turmeric powder and salt. Mix well. Add the coriander leaves and mix well. Remove from heat and fill the mixture into the capsicum halves. Place the capsicum in the same pan and cover and cook for two minutes till soft.
