This recipe is from FoodFood TV channel By Sanjeev Kapoor 04 Nov 2014 in Recipes Course New Update Main Ingredients Ripe mangoes, Cucumber Cuisine Fusion Course Soups Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Sweet and Sour Level of Cooking Moderate Others Veg Advertisment Ingredients list for Cold Mango Soup 1 Ripe mangoes peeled 2 large Cucumber peeled 1 clove Garlic 4-5 Basil leaves 2 Pickled jalapenos to taste Salt 1 cup Orange juice 1 Red capsicum roasted 1 Yellow capsicum roasted 2 teaspoons Sweet corn kernels few sprigs Fresh coriander leaves 1/2 Lemon Method Advertisment Quarter the cucumbers vertically, remove seeds and cut into large pieces. Cut mango roughly and put into a mixer jar. Add cucumber, garlic, 4 torn basil leaves, pickled jalapenos, salt and orange juice and grind till smooth. Chop roasted capsicum and put into a bowl. Add drained corn. Chop fresh coriander leaves and add to the bowl and mix. Add juice of ½ lemon to the mango mixture and mix well. Transfer into a bowl and chill. Arrange a large basil leaf and sweet corn-capsicum mixture on one side of the soup bowl, pour the soup around and serve chilled.
