Cold Apple Soup

Green apples, Butter

  • Green apples
    2 medium
  • Butter
    1 tablespoon
  • Salt
    to taste
  • Sugar
    3 teaspoons
  • Black pepper powder
    to taste
  • White wine
    1 cup
  • Vegetable stock chilled
    1 cup
  • Red apple
    1/4 medium


Step 1

Chop green apples roughly. Heat butter in a deep non stick pan. Add apples and sauté for a minute. Add salt, sugar and black pepper powder and sauté till apples are lightly browned.

Step 2

Add white wine and cook till apples soften. Transfer into a blender jar, add chilled vegetable stock and blend till smooth. Finely chop red apple for garnish.

Step 3

Pour the blended soup into a serving bowl, garnish with red apple and serve cold.
