Coconut Prawn Noodle

Ingredients list for Coconut Prawn Noodle

  • 5-6 tablespoons Coconut milk
  • 7-8 medium Prawns (medium) shelled and deveined
  • 1 cup Noodles boiled
  • 2 teaspoons Ginger
  • 2 Green chillies chopped
  • 3-4 Spring onions with greens chopped
  • 1 cup Fresh coriander leaves chopped
  • 2 tablespoons Oil
  • 1 tablespoon Lemon juice
  • 2 teaspoons Garlic chopped
  • 2 teaspoons Lemon grass chopped
  • 1 teaspoon Coriander powder
  • to taste Salt

Method

  1. Combine 1 teaspoon chopped ginger and green chillies in a grinder jar and grind into a coarse paste. Add some spring onion with greens, chopped coriander and 1 tablespoon oil and grind again. Add lemon juice and grind again. Set aside.
  2. Heat remaining oil in a non-stick wok. Add garlic and remaining ginger and sauté well.
  3. Add lemon grass and mix well. Add prawns and mix well.
  4. Add coriander powder, mix and sauté. Add salt and mix well.
  5. Add ground paste and mix. Add noodles and mix well.
  6. Add coconut milk and mix well. Add remaining spring onions and adjust salt. Toss to mix and cook for a minute.
  7. Serve hot.
