By Sanjeev Kapoor 03 May 2016 in Recipes Course New Update Main Ingredients Refined Flour, Fresh Coconut Cuisine Fusion Course Desserts Prep Time 26-30 minutes Cook time 31-40 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Non Veg Ingredients list for Coconut Cake 2 cups Refined Flour 2 tablespoon Fresh Coconut 1 cup Butter 1 cup Sugar 3 Eggs 1 teaspoon Vanilla essence 3/4 cup Coconut scraped 1 cup Coconut milk Method Mix refined flour and baking powder and sift. In a mixing bowl beat together butter, sugar, eggs and vanilla essence till soft and fluffy. Blend in scraped coconut. Add flour to this mixture alternating with coconut milk, until both have been used and a smooth batter is formed. Grease a loaf pan and line with a brown paper. Pour the batter into the prepared pan and bake in a preheated oven at 180°C for half an hour, or till done. To test insert a skewer, if it comes out clean the cake is done. Cool the cake on rack.
