Chocolate and Almond Mousse

Chocolate mousse is well loved by most but when almonds are added to it the taste is further enhanced. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Chocolate and Almond Mousse

  • 1 cup Dark chocolate chopped
  • 1 cup Almonds blanched
  • Egg yolks 3
  • 2½ teaspoons Castor sugar (caster sugar)
  • 1/3 cup Milk
  • ¾ cup Fresh cream
  • for garnishing Cocoa powder
  • for garnishing Chocolate sticks

Method

  1. Cook the egg yolks and caster sugar in a double boiler, stirring, till thick or till it coats the back of the ladle. Remove from the heat.
  2. Add the milk to the egg mixture and mix well. Remove from heat and set aside.
  3. Place the chopped chocolate in a deep bowl and pour the milk-egg mixture over it and mix till the chocolate melts.
  4. Beat the fresh cream lightly and fold into the chocolate mixture.
  5. Grind ¾th almonds coarsely and sliver the remaining.
  6. Add ground almonds to chocolate mixture and mix well. Place the bowl in the refrigerator for 10-15 minutes or till it thickens.
  7. Place chocolate-almond mixture into individual glasses and refrigerate till set.
  8. Sprinkle cocoa powder and serve chilled garnished with almond slivers and chocolate sticks.
