Ingredients list for Chocolate Mousse Shots

  • 120 grams Dark chocolate chopped
  • 60 millilitres Fresh cream
  • 2 Egg yolks
  • 1 Egg
  • 600 grams Castor sugar (caster sugar)
  • 1 tablespoon Orange juice
  • 1 cup Whipped cream
  • for garnishing Chocolate shavings

Method

  1. Heat cream in a non-stick pan and once it comes to a slight boil, turn off heat. Add chocolate and mix well.
  2. Place the egg yolks and the egg in the upper bowl of a double boiler. Add sugar and whisk well to make a sabayon.
  3. Take the bowl off the double boiler. Add the chocolate ganache and mix. Add orange juice and mix well. Add whipped cream and fold in well.
  4. Fill the mixture into a piping bag and pipe into individual shot glasses. Refrigerate for 3-4 hours or till set.
  5. Garnish with chocolate shavings and serve.
